John and Anne Hoyt, makers/proprietors, producing award-winning traditional European style cheeses from pure, fresh, local cow's milk adding no color or preservatives. The cheese cave is home to up to 2,000 wheels of Raclette, brushed with brine and turned daily during the 3-month to 2-year aging process.
